The founder’s philosophy is grounded in precision and restraint. Pare avoids gimmicks in favour of scientific integrity and craftsmanship, with the goal to always to express the site, not the winemaker’s hand. The brand is all about the fruit and everything is handled gently and carefully. No tricks. Just respect for what the vineyard gives.
Pare’s debut releases, single-site Chardonnay and Grenache, come from some of the state’s most respected plots: Bowyer Ridge Vineyard in Kenton Valley, Adelaide Hills, The Jericho Family Vineyard from Blewitt Springs, McLaren Vale and The Douglas Gully Vineyard, also in Blewitt Springs, McLaren Vale.
All wines proudly carry the vineyard name on the label, a rarity in Australia, where regional blends still dominate.
Vintage in Pare Wine is a logistical ballet. Fruit is hand-picked at first light to avoid heat exposure, and processed immediately with the help of fellow winemaker Nick Dugmore, of The Stoke, supports the project.
Timing is critical, especially for whites, which are pressed the same day. Without access to chilling equipment, the team relies on weather windows and meticulous planning to preserve freshness. It’s science-led winemaking powered by a deep respect for nature.
The numbers are small, and proudly so. Their 2024 vintage includes just 550 dozen bottles in total, four Grenache bottlings and one Chardonnay, each treated with care and restraint. No shortcuts, just hand-sorting and attention to detail.
