A major new luxury hotel is preparing to open its doors in Adelaide, bringing a rooftop restaurant, day spa, heated outdoor pool and 196 rooms and suites to the southern end of the CBD.
Crystalbrook Sam will open at 15 Halifax Street, Adelaide, in late December 2026, marking the first South Australian property from Crystalbrook Collection Hotels & Resorts.
Just three streets south of Adelaide Central Market, the hotel has been designed to capture the food, wine, art, culture and relaxed lifestyle South Australia is known for.

Sitting at the top of the hotel will be Matines, a 120-seat coastal Australian bar and grill showcasing South Australian produce cooked over fire, local oysters, coastal favourites and generous plates.
Add martinis and views across the city towards the Adelaide Hills, and Matines is shaping up as a destination in its own right.
At street level, Café Sami will move from morning coffees to afternoon wines and evening drinks, while a tucked-away library nook will provide a quieter escape.
For those whose perfect staycation involves doing very little, Eléme Day Spa will offer massages, facials and restorative treatments alongside a heated outdoor pool and sauna. There will also be a fully equipped gym and three flexible meetings and events spaces catering for more than 100 guests.
Upstairs, accommodation will range from 25-square-metre rooms through to expansive 78-square-metre suites.

Accessible King Rooms will offer generous wheelchair circulation, accessible-height controls and roll-in showers with grab rails and built-in marble benches.
The hotel has been designed by South Australian practice PACT Architects and constructed by BESIX Watpac, with local brick, bronze-coloured metals and locally coloured concrete helping connect the building to its Adelaide surroundings.

That local approach continues inside, where sculptural works from South Australian artists and makers will appear throughout the property.
Crystalbrook Sam joins a national portfolio spanning Cairns, Sydney, Byron Bay, Newcastle and Brisbane, with another property planned for Canberra in 2027.
For Adelaide, however, this is something entirely new.
