The brainchild of David España Gallardo, a true madrileño, and his Adelaide-born wife, Catriona, Bar Madrid is a fusion of their shared passions for great food, fine wine, and the joy of gathering.
Once a fencer in Spain, David later pursued a career in market research before realising his true calling was in food and drink, because, really, who doesn’t love to eat?
In Spain, the bar is more than just a place to grab a drink—it’s a social hub, a cornerstone of daily life. Inspired by the tapas culture of La Latina in Madrid, where Sundays are spent bar-hopping from one bite to another, David wanted to bring this philosophy to Adelaide.
At Bar Madrid, every drink comes with a complimentary tapa, just like in Spain. It’s a simple but essential tradition, where food and drink are always intertwined.
The menu embraces Spain’s diverse culinary traditions, offering platters of premium Spanish cheeses and cured meats, including the legendary Jamón Ibérico from Guijuelo, Salamanca—a delicacy that takes over 730 days to cure.
Mornings start with expertly brewed Coffee in Common beans and fresh pastries from Prove Bakery, while the afternoons transition into a vibrant wine bar serving Spanish wines, sherry, vermouth, and locally sourced selections.
With its European charm and lively foot traffic, Norwood was the natural choice, it felt like the perfect place to bring a slice of Madrid to Adelaide.
For David, success isn’t about chasing fortune—it’s about doing what he loves: sharing his culture, his food, and his stories with South Australians. His goal? To survive, pay the bills, and create a space where people come together over good food and great company. Because at the end of the day, that’s what a true Spanish bar is all about.
