Adelaide pastry lovers, get ready…Shadow Baking is coming to Glenelg!

From the creative team behind Gelato Messina, Shadow Baking has already made waves in Sydney’s pastry scene, and now they’re bringing their signature sweet and savoury treats to South Australia with not one.. but TWO brand new locations.

The newest Glenelg store will open its doors at 8/1 Colley Terrace and there’s plenty to be excited about and their second location will be revealed later this year.

Founded by three of Gelato Messina’s top chefs ,Tom Mitchell (ex-Zumbo), Florian Fritsch (ex-Dinner by Heston and Rockpool), and Remi Talbot (ex-Messina Creative Restaurant and Den). Shadow Baking is the result of over a decade of experience in gelato development and fine dining.

Now, they’re applying that same creative flair to pastries, and the results speak for themselves.

Shadow Baking first launched in Sydney in 2024 and quickly gained a cult following with its expert craftsmanship and innovative flavour combinations.

Their Glenelg store will feature all their best-sellers, including the now-famous Custard Tart Danish, Coconut & Pandan Brioche, and a mouthwatering range of savoury focaccias. To top it off, they’ll be serving Five Senses Coffee all day, every day, the perfect pairing for a fresh pastry.

The Glenelg opening will also come with a few exclusive treats. In celebration of Easter, Shadow Baking has collaborated with Whittaker’s Chocolate to create a Spiced Custard Brownie Cookie and a Pain Suisse made with Whittaker’s Choc Coconut Block.

They’ll also be offering their own take on the classic hot cross bun with Hot Cross Scrolls available in both chocolate and fruit options.

The Glenelg store marks Shadow Baking’s first step into the South Australian market but it won’t be the last with a second Adelaide location in North Adelaide already in motion and opening later this year.

With a track record of success in Sydney and a team of chefs who know how to make things taste outrageously good, Shadow Baking is set to become Adelaide’s go-to spot for top-tier pastries and coffee.
